Spring is here ! Bye bye short rainy days and hello sunshine ! Here we were such in need of sunny vacation that we packed  our suitcases, jump into a car and drove to Andalusia. And guess what ? We do not regret it ! Andalusia is a beauty and spring is just the perfect season to go there. From our hometown in France it is a 17 hours drive but it was totally worth it. Among the things I loved, I particularly enjoyed discovering the majestic beauty of the Alhambra of Granada, wandering in the streets of Malaga, tasting fabulous tapas in typical andalousian bars and swimming in the beautiful mediterranean see. Put on your sunglasses and sit comfortably, the travel begins…

Looking for a pretty idea to surprise your friends ans families ? This is a recipe for you ! I found a picture of a beautiful thanksgiving cake (instead of a bunny it was a pumpkin hidden in a cake !!) and I immediately loved the idea of a surprise cake. As Easter was around the corner I made it a bunny cake ! First it looks just like a traditional (boring) cake, but when you cut the first slice in front of your guest a little bunny magically appears. Everybody while be amazed and will try to guess how you did it. Here is my recipe !

For this desert you’ll need to bake two cakes. I picked chocolate and lemon flavors as I think they are great combined together. The lemon flavor brings a fresh note to the strong taste of chocolate.

Ingredients

Chocolate cake:

– 1 1/4 cup baking chocolate
– 3 eggs
– 3/4 cup sugar
– 1/2 cup flour
– 1 tsp baking powder
– 1/3 cup butter

Lemon cake :

– 1 1/2 cup floor
– 1 1/2 cup sugar
– 4 eggs
– 1 tsp baking powder
– 1/2 cup butter
– 2 organic lemons

This is how I did it :

Bake the chocolate cake:

1- Melt the chocolate down in a bain marie with 5 table spoons of water

2- Mix together the eggs and sugar in a bowl till the preparation looks whiter. Add de flour, baking powder, melter butter and chocolate and mix together.

3- Pour into a rectangular cake tin (butter the tin first)

4- Cook in the oven at 350° during 30 min.

5 – Let the cake cool down and cut into slices of 0.8in

6 – Cut out bunnies in each slice with a bunny shaped cookie cutter

Bake the lemon cake:

7 – Separate the eggs yolks from the eggs whites

8 – whip egg-whites to a light mousse

9 – Melt down the butter in a bain-marie

10 – Zest the lemons

11 – Mix together the eggs yolks and sugar

12 – Add the lemon zest, floor, baking powder et melted butter. Delicately incorporate the whipped eggs whites

13 – Put your chocolate bunnies in the bottom of you rectangular cake tin.

14 – Pour the preparation on the bunnies

15 – Cook in the oven at 350° during 30 min

16 – Let the cake cool down and cover it with frosting made of lemon juice and powdered sugar.
